The Whole Enchilada Fiesta will return to Las Cruces in October 2027, according to Las Cruces Mayor Eric Enriquez, who said the popular community event helps attract visitors and boost the local economy.

During Monday’s Las Cruces City Council meeting, Enriquez reflected on the success of recent community events and emphasized the importance of bringing back long-standing traditions that showcase the city.
The mayor said events such as the Whole Enchilada Fiesta generate tourism by attracting visitors from outside the area, benefiting local businesses and supporting the city’s economy.
“We’ve seen these activities, and these events bring tourism and bring in other people from outside our city,” Enriquez said during the meeting.
Enriquez noted the Whole Enchilada Fiesta had been absent for several years before making its return, calling it encouraging to see the tradition revived.
Looking ahead, the mayor announced the city plans to bring the festival back in October 2027, adding that the event will be held in partnership with New Mexico State University.
He also pointed to the success of this year’s Fourth of July celebrations as an example of how large community events can draw residents and visitors together.
The Whole Enchilada Fiesta has long been one of Las Cruces’ signature events, celebrating the region’s food, culture and community while featuring the preparation of a massive enchilada, live entertainment and family-friendly activities.
City officials have not yet released additional details about the 2027 festival, including specific dates or the full schedule of events.
